Sicilian summer memory: aubergine parmigiana

Aurgergine parmigiana is a typical sicilian dish usually prepared during summer, when aubergine and tomatoes are at their best. You need augergine, vegetable oil, tomato sauce, basil and aged ricotta cheese. Put sliced aubergine and a good quantity of salt in a bowl and wait about ten minutes to eliminate some water from aubergine. Wash aubergine, dry it and fry in a pan. Put some tomato sauce on a dish and make a layer of fried aubergine and then again sauce, ricotta and basil. Continue with others layer until you finish the ingredients. Your parmigiana is ready! It will be much better you eat it not hot. Enjoy!
